Blueberry Dressing

It was incredibly difficult to not eat all fresh blueberries when I got this week’s share. I love adding them to my morning cereal and cups of yogurt. I wanted to bring them to the dinner table before they were all gone. In combination with the Raindance Harvest lettuce (which is consistently amazing), I assembled a dressing to include my berries. Here is what I came up with:

INGREDIENTS

  • ¼ cup lemon and lime juice - freshly squeezed
  • ¼ cup cider vinegar
  • 1 tablespoon of honey or sugar
  • 1 to 1 1/2 cup blueberries
  • ¼ cup Vanilla or Plain Yogurt
  • 2 tablespoons Olive Oil
  • 1 teaspoon Fresh Ground Pepper
  • Couple Dashes Salt

HOW TO PREPARE

Take cupped hand of the blueberries and lightly chop. Mix together Lemon/Lime Juice, Salt and Honey. Stir Yogurt, Oil and blueberries (chopped and whole) in separate bowl. Combine all ingredients and stir. Pepper added while stirring. Season to taste. Some like less vinegar/citrus. Others like it more creamy and increase the yogurt. Let us know your variation.
